- Wash your hands and wear gloves when handling food.
- Keep cold foods cold - 41F or below.
- Keep hot foods hot - 135F or higher.
- Cook stuffed foods to 165F.
- Cook injected meats to 155F.
- Cook steaks and chops to 145F.
- Cook vegetables and starches to 135F.
- If your food has been left out at room temperature (70F) for two hours or more, make sure to throw the food away.
- Cool food as quickly as possible. You must reach 70F after two hours of cooling and then 41F after four hours of cooling.
- Use leftovers within 3-4 days.
- Reheat leftovers to 135F.
